Balsamic Chicken

Balsamic Chicken

Growing up my mother would make a similar chicken to this. Instead of balsamic however it would be Italian. And of course, it was always grilled too, which I still prefer. Any time I can use the grill over the stove I am down for it. My husband also hates vegetables, so this was one way to incorporate vegetables into a meal that he actually likes.

What You Need:

2 Ibs boneless Chicken Breast (you can use 1 or 2 Ibs. I use 2 as I use the left over for meal prepping)

Half of a White Onion

1 Large Tomato

½ cup Balsamic Vinaigrette

5 Tbs Olive Oil

Salt + Pepper

Oregano

 

What To Do:

  1. The 2 Ibs of boneless chicken breast you will want to take out of the package. Once you separate each piece, cut each one in half, however do not fully cut one side. Leaving it attached making one big thing piece. Sometimes I end up repeating this step twice. Therefore I cut it twice so it is in three sections but still attached.
  2. Pour 5 Tbs of Olive Oil into your pan. Put on medium heat.
  3. Chop onions thin, long. Add them to the pan.
  4. Dice tomato in small chunks. Add to Pan.
  5. Placed the sliced chicken on top of the Onion’s and Tomato’s. Add Salt + Pepper and Oregano to the top side of the chicken. Then add a few more onions and tomato’s on top of the chicken too.
  6. Let it cook for about 10 Minutes.
  7. Pour Balsamic Vinaigrette on top of chicken. Let it cook for another 5 minutes.
  8. Serve over a bed of, my favorite, risotto or with a spinach salad.
